Vegetable Beef Stew
2 1/2 lb. beef stew meat, cooked and shredded
7 medium potatoes, cubed
1 small onion, minced
3 cloves garlic, minced
1 bell pepper, diced
4 stalks celery, diced
1-2 c. frozen mixed vegetables
water
beef broth powder to taste
black pepper to taste
Place all ingredients in a large slow-cooker. Cook on low for several hours.
Serve with hot biscuits.
Caramel apples are a treat any time of year, but it is an especially fun and delicious family activity to make them on a cozy fall evening. The caramel recipe is from Betty Crocker and I think it's great. Also, you can use just about any kind of apple, but if you enjoy a drastic sweet/tart contrast like I do, then try Granny Smith apples.
Caramel Apples
2 cups sugar
2 cups heavy whipping cream
3/4 cup light corn syrup
1/2 cup butter or margarine
About 4-5 large, round apples
Optional: finely chopped nuts, sprinkles, etc.
Wash apples and dry them well. Place them on a platter or sheet of waxed paper and firmly insert a fork or popsicle stick into the top. Heat all ingredients to boiling in 3-quart saucepan over medium heat, stirring constantly. Cook, stirring frequently, to 245 degrees F on candy thermometer or until small amount dropped into very cold water forms a firm ball that holds its shape until pressed. [Or until mixture coats metal spoon and forms a light caramel-colored mass when poured on a plate. Deciding when the caramel is the right consistency is a little tricky. I suggest frequent testing and careful monitoring of the thermometer, although reaching the right temperature doesn't always mean it is done or not. The last time I made them, the caramel was ready before it reached 245 degrees. Sometimes you may have to let the caramel cool a bit before you dip the apples.] Remove caramel from heat and dip apples in the mixture. Immediately sprinkle the apples with the nuts, sprinkles, etc. if desired, and let set at room temperature until cooled. You'll have a mouth-watering, finger-lickin' good time eating them! Prepare to be messy during the process.

S'mores
chocolate bar
marshmallow
gram crackers
Put chocolate bar and marshmallow between two gram crackers, heat in microwave for 5 seconds. EAT!
How funny...I kept thinking I needed to post our caramel apple recipe on here--now I see Abriana did. :D It's one of my favorites fall foods too.
Umm, s'mores! Except I would specify dark chocolate.
My favorite fall food is pumpkin pie. I don't have a recipe, but I like the fresh pumpkin better than the canned, although either is best topped with real whipped cream.
So, here is a recipe: open the can or clean out the pumpkin. Add some cinnamon and nutmeg (I think that is what is put in it. Toss in whatever else it needs, like sugar and maybe an egg, and put it in the oven at a high temperature. When the smoke detector starts beeping, you know it is overdone. So you go to a bakery and purchase a ready-mede pie. Or ask a loving wife or daughter to make one (hint, hint).
If anyone reads this other than H, then you know she forgives her dad and has a sense of humor like his.
